Fort Collins Puts Modern Spin on Wine Making

Fort Collins has a little fun with its wine. Case in Point: Vintages Wine, which allows the buyer to make the rules. It's a Custom-Crush facility in Old-Town Fort Collins where guests purchase grapes – not bottles – to grow into their wine of choice. Once the decisions is made, the wine is fermented for 2-12 weeks before the buyer comes back to bottle their wine. As an added bonus, the buyer can then design their own signature label. Also adding a new spin to the traditional practice is Wilbur's Total Beverage, which provides entirely organic and biodynamic wines. The new age approach ensures that the grapes are grown without the aid of artificial fertilizers in order to provide customers with the purest wine possible.
