Located in Cool Springs, Boscos Restaurant & Brewing Co. has gourmet brick-oven pizzas, chef-created daily specials, elegant entrees and a laid-back vibe.

Bosco's Handcrafted Beer

But the main attraction is its award-winning, handcrafted beer. The popular brewery offers up to 50 different varieties each year, including its internationally recognized Famous Flaming Stone, the amber Bombay IPA and robust, full-bodied stouts and porters.

“Our brewers are some of the best, and Boscos has received golf medals for craft beers at the prestigious Great American Beer Festival in Denver,” says Jeremy Feinstone, president of RPI, owner and managing group for Boscos restaurants.

Boscos brews in small batches so it can offer freshness and variety, and it always has eight beers (including three seasonal) on tap. While Boscos’ tagline is “The Restaurant for Beer Lovers,” its food is carefully crafted, too – and it’s far from your typical bar fare.

Bosco's Popular Menu Items

Boscos’ signature menu items include fresh salmon baked on a cedar plank, a juicy double-cut pork chop, and a prime cut of steak. The brick-oven gourmet pizzas are especially popular, with fresh ingredients such as sun-dried tomatoes, portabella mushrooms, basil, cilantro, mesquite-smoked chicken breast, sweet Italian sausage, pesto and much more.

Appetizers are way beyond the ordinary, including wood-oven roasted jumbo shrimp, smoked duck spring rolls, fried artichoke hearts with a buttermilk garlic dipping sauce, crab cakes served with roasted red pepper aioli, and grilled portabella mushrooms stuffed with sun-dried tomato pesto, gorgonzola and pine nuts.
Desserts are satisfyingly decadent, with choices such as Crème Brulee Grand Marnier (creamy custard with a hint of orange and vanilla beans), chocolate torte cake, tiramisu, bread pudding, and apple crisp with ice cream, nuts and caramel sauce.

“We’re not afraid to try different flavors and tastes,” Feinstone says. “We find it’s important to bring in fresh ingredients, and we work hard to maintain a price structure that allows a family to come back often.”

Bosco's Events

Regular events at Boscos include wine tastings, brewmaster dinners, and a daily drawing for a chance to attend the Great American Beer Festival in Denver.
Offered six times a year, the popular brewmaster dinners give people a chance to learn about craft beers and try a range of styles – five different beers with a five-course meal.

“It’s our way of letting people try different beers and showing them how the flavors of beer work well with food,” says Andrew Feinstone, director of operations for RPI. “Everyone is used to wine and food, but many people don’t realize that food goes great with beer, and that there are so many different flavors of beer.”
