The largest city in northwestern Kansas is Hays, largely a college town thanks to Fort Hays State University. Education and health care are two major industries, and an established arts community is well-supported. A couple of microbrew ventures are now thriving: Defiance Brewing Co. and Gella’s Diner. Gella’s Liquid Bread Brewing Co. produces our pick for the city, an Oatmeal Stout, and a No. 45 Red Rider.
